After twenty years of behind the counter, in the kitchen and on the phone at the Rathdowne Street Food Store, my approach to food and service is fairly fixed.

The food must be fresh, the flavours must be clean, visually it must be stimulating, interesting, sometimes risqué.

Whenever possible the food needs to be ethical, preferably organic and local.

It also helps if the suppliers, producers and growers are friendly and as is
often the case, friends they become.

Looking after the customer, from the first point of contact, to the last,
is paramount.

Simple really.

Warm, personal, professional service is as rewarding for our staff as it is for
the guests we enjoy to look after.

And now it is pared back and it is largely just me, to produce delicious food,
to execute quality service (with the help of my friends).

Our conversation is now online, rather than over the counter.
